The Five Elements, The Five Flavors, and Their Organs

The Five Elements have several important associations when it comes to daily health.

Each Element is linked to meridians or energetic pathways, which in turn correspond to internal organs.


For example:

  • The Water Element governs everything related to the health of the kidneys and bladder.

  • The Wood Element governs everything related to the health of the liver and gallbladder.

  • The Fire Element governs everything related to the health of the heart and small intestine.

  • The Earth Element governs everything related to the health of the spleen and stomach.

  • The Metal Element governs everything related to the health of the lungs and large intestine (colon).


Flavors and Elements

The five flavors of food are an important part of the Five Elements System. These flavors are salty, sour, bitter, sweet, and pungent (spicy). Each one is associated with a specific Element.

  • The salty flavor corresponds to the Water Element and includes seaweed, kelp, and of course salt (ideally in its natural form).

  • The sour flavor corresponds to the Wood Element and includes fruits such as lemon and mango.

  • The bitter flavor corresponds to the Fire Element and includes coffee, chocolate, and certain types of lettuce.

  • The sweet flavor corresponds to the Earth Element and includes sugar, cherries, ripe bananas, honey, and more.

  • The pungent (spicy) flavor corresponds to the Metal Element and includes green onions, parsley, cloves, garlic, etc.

Some foods can contain more than one flavor. For example, vinegar is considered both bitter and sour at the same time.


Flavors and Organs

The importance of flavors in Five Element Medicine lies in the influence they have on internal organ health. For example:

  • Salty foods affect the kidneys and bladder.

  • Sour foods affect the liver and gallbladder.

  • Bitter foods affect the heart and small intestine.

  • Sweet foods affect the spleen and stomach.

  • Pungent foods affect the lungs and large intestine.

The key is moderation. When each flavor is consumed in balance, it helps strengthen (tonify) the energy of the internal organs and their corresponding meridians. However, when consumed in excess, the opposite occurs—energy is weakened, and more complicated patterns of imbalance can develop.
